Going to start trading among hubs and would appreciate any guidelines regarding how to avoid getting ganked undocking from a trade hub. Would a general rule of thumb be less than a billion cargo value in a freighter and less than 100 million in an industrial?

Take a fast ship. Run it in a straight line from the undock until you are /at least/ 160km out. Further is better. Bookmark.
That's your 'insta undock' bookmark. If you're lucky on placement, you should be able to undock, and immediately warp to it (as you're already at max speed)
Now, it's not quite that easy, due to being flung out at a slight random angle. So it'll take a while to create a good one. There are tutorials on it.
1 to 1.5 billion in a freighter is /relatively/ safe.
For an industrial, expect to be ganked if you're carrying anything small and valuable. A load of trit is probably fine. Anything else, well, if a thrasher or catylast can take you down, they probably will at some point. Fit a tank. not just cargo hold expanders. Due to all the bumping during peak traffic time periods, it's generally a good idea to wait until off hours before you try to create insta undock bookmarks from trade hubs. This means AZ time for trade hubs other than Jita and right after downtime for Jita. |

Moon Jita IV-1 is aligned with the undock of Jita IV-4. Warp to 100 km, and make a mid-point bookmark.
Amarr (Oris) is trivial to make a bookmark on, since you can turn on the Tactical Overlay, click on the station, and travel down the vertical line to keep on target. |

You can also make insta-undock bookmark by undoking in lets say interceptor not touching controls and letting it go 150km+. This way you can warp instantly upon undocking because youll be aligned to that bookmark. Adhering to the 1B per freighter will make you go past gankers camping surrounding gates. |

I have bookmarks above and below the station at 0 km, so I don't get dumped with the crowd slow-boating to dock. |

It should be mentioned the safest way to move your things is to contract them to professionals and make sure the collateral covers the amount being shipped.
Red Frog or Push are the two leaders in shipping.

By "Industrial" you mean a t2 hauler, right? Because hauling anything in a T1 hauler is a death sentence when you are near a trade hub.
But, yes those number sound about right. I will usually try to keep the load value less than 1 or 2 times the hull price. damn it is hard to delete my signature |

Most stations eject you in a random cone, centred around an obvious straight line. if it's downwards it's very easy to get an insta-undock dead on, just use the tactical overview. If it's a horizontal eject, double-click on the horizon distance markers to move that direction.
There are a few that spit you out at odd angles, eg the Caldari trading stations shaped like a wedge of cheese. Those bung you out at an angle of 0.30, so go horizontally 200km, then up 60. |

The insta warps are key to being safe at undock, but these also help for indys:
1) Fit a cloak, and/or afterburner/microwarp. When you jump from a gate do the cloak+AB/MW trick. This reduces the time you can be lock and scaned.
2) If you don't need cargo exp fit warp core stabs.
3) If you have extra cpu and power grid fit shield exp, and resists.
4) Fly active hit your resists, and AB/MW/Cloak every jump.
If you are flying an Orca do the above and put a damage controller + bulkheads in both lows. I've survived ganks in structure on my Orca a number of times due to simply having my DC on.
Also note that for some cargos a Battle Cruiser or Battle Ship may be a safer hauler due to their tank and that they often aren't scanned.
Just keep in mind that none of this will keep you safe if someone decides it's "worth" it to gank you. What the above does is make you a less interesting, easy, and less profitable target.
