Badger:
skin 1 would be pristene, the red lines intact, no staining, alpha maps for the reflections on the various panels
skin 2 would be the current skin, lines chipped and scuffed, some staining, dirty panels, and reflections
skin 3 would be a heavily battered skin, more damage, scrapes and scores in the hull plating, some panels removed, etc
Apoc
Skin 1 would be perfect, liturgical prayers embellished on the hull, plates gleaming with polish, bronze and armour bright.
Skin 2 would be the current apoc - slightly sating finish to metal, polished plates and duller other surfaces
Skin 3 would be a weathered warhorse, armour dull and heat-marked, blast marks and repaired panels to be seen over the hull.
it could be so easy with the use of master texture files, to alter details and really bring ships to life, with little actual worload. it could also work as a isk sink, with players spending isk to refurbish damaged ships to new condition
I'd like to see something along the lines of this to show varying conditions of ship damage, as well as age as you described.
For damage i'm thinking of rupture marks in the hull, missing and loose plating, peeled back hull plates, and more fire and atmosphere venting effects than just the generic fire that we all see when we hit structure. Stuff like ammuntition strike marks in the hull ,and scorch marks from fire and missile impacts. It'd be cool to see the loss of boosters in the damage too, i.e. several of the ships boosters not functioning properly, or working intermittantly with a trail of smoke or flames behind them...
It's a lot to code and work out, but it's something that would give more of a depth to the RP side of PvP, as well as providing even more eye candy 
Of course, these effects could be turned off when required to minimise lag and other problems during fleet battles
