For me I would say,
Tempest- Because it is the only ship in Eve that actually looks like a Pirate ship and does a damn fine job at killing things.
Vagabond- a.k.a The Artificial Phalice of Doom,its sleek lines and sumptous hue just scream Eves Muscle Car.
Mammoth- I will never figure out why CCP made the Phoon a flying garbage can and the Mammoth look more like how a BS should look but none the less the mammoth is a masculine looking ship and I frequently fantasise straping 6 800s on it and slaughtering the masses.

Rifter: Because it looks like a Pod Racer and flys like one
Jaguar: Because it looks like a Pod Racer with extra shiny bits and fins
Wolf: Because it looks like a Pod Racer but with enough firepower to destroy a small planet
I don't really like any of the other minmatar ships, although if you're looking for 3 different hull types then the thrasher and the rupture look ok.

Nidhoggur, Claw, Tempest, Mammoth (The mammoth should have been used for the typhoon model, ffs! It's the most battleship-y looking ship in game!)

Hmm, I'd have to say:
Rupture: Looks like the aft of a spanish gallion, and half a pirate ship is better than none at all.
Cyclone and the Thrasher: They're space trains, what more do you need?
Tempest: As has been said it just screams pirate ship with the large solar sails.
Stabber and Vagabond: They have that "we've strapped a bunch of hercules rockets to this ship" feel and they're both as fast as you get in their class. Despite the fact that they look taped together, they look taped together in a good way.
Rifters: They remind me of harleys and have the oomph behind them to back up the feeling.
...and just to be different the Typhoon; I think that it looks sufficiently big and deadly to be a battleship, I just wish it were sufficiently deadly to back up its looks.

jaguar - shiney pearlesant green coloured rifter, hmmmmmm
tempest - the only BS ingame the has the look of `im going to kill you` about it
claw - this ship looks like a butterfly on steroids, almost the size of a 1 man fighter rather than a frigate

Thrasher (rawr), Jaguar (translucent blue fins and bluey-green hues), Stiletto (all the sharp bits!). Rupture is endearing in a glue-gun-meets-Spanish-galleon way.

Rifter has an always will be the best looking frig period.
Recently got my first good look at a cyclone (360 'look at') and its quite nice also.
Pretty much all the rest are junk though...literally.

I only dislike the Frigates apart from the rifter which is fuking Uber, i want one parked in my driveway!, The typhoon looks like the world eater from ST Original.. Much respect for that, The Wreathe... ALL ABOARD!!!! Hoarder, Reminds me of Atlas holding up the world or a backpacker, Thrasher looks mad also, should be a cruiser though, and i want a Mega sized Rifter... BS class, that would be Uber WTF!!!

Vagabond is awsome from the start, you can't say speeeeeeeeeeeeeeed! better than that hull
My new favourite is Sabre though, I love it ^_^, it's a proper colour - not brown, it's got little fins and gills, it's like a little pirahna, and hurts like one too with all those little guns/teeth

Cyclone and Thrasher (and their counterparts). Both, especially the cyclone, have the unorthodox look of being heavier in the front than in the rear (kind of like a train, but heavly exadurated). Nothing streamline about that, just looks like you're about to get hit by world of hurt.
Rifter/counterparts, Kinda like a charriot with those 4 engines in the front... badass.
Tempest? Thing is the worst looking ship in the game. Unless you're into roleplaying and like the pirate feel of it... its nothing than a box, a stick and a couple of triangles.

BATTLESHIPS: The Typhoon is an awsome looking ship, but the skin needs to be redon.
THe tempest is an ugly hulk if i've ever seen one. I nominate it the worst looking battleship in the entire game.
INDUSTRIALS: All of the minmatar industrials look great, with the hoarder being the ugliest.
Rifter/rupture and the cyclone aren't bad either. As far as capital ships go, the Nidhogger carrier looks awsome, prob the most awsome looking carrier of all the races, I think.
The MINMATAR TITAN is the ugliest piece of **** ever. We really got jipped on that one...
What i'm really excited about is what the new minmatar battleship and BC will look like, so many different ways they can go. Guess we have to wait untill E3?

Oh, and I almost forgot, the minmatar DREADNAUGHT is nice looking, it's definetly the most unique ship in the game... it's vertical in design unlike all other ships which are horizonal.
Regardless of whether or not you like it, it's certainly unique and universally recognizable as minmatar.

Minmatar ships just look mean. They look like they wanna kill you.
If you've read the Hitch Hiker's Guide to the Galaxy (Fantastic book by the way), you might remember the part where they are on Magrathea, whenever I see a fitted wolf I think of the description of the Kill O' Zap gun. Just nasty.
Naglfar is one of the best looking ships in game IMO. Again a ship that looks built to kill.
Naglfar, Rifter class (all of them), and Mammoth. Mammoth should be a BS. Make it a little leaner, less blockiness and a lot of guns it would be a real killer.
My problem with a lot of ships (especially the newer ones is the inane bulkiness (dominix-style). The gallente/amarr dreads look like they would make great plush toys, and the dominix is just a big cuddly pillow. The Naglfar manages to look majestic in an I'm-going-to-rip-you-up-fool way
