From a tactical standpoint it is more efficient and "safer" to destroy any and all ships on the field without a second thought... because if you try holding one down in the middle of a battle, the rest will still be shooting while you are "babysitting" your target (for god knows how many minutes)... and if you try to capture the last man on the field... well... self-destruct lasts 2 minutes.
Neither are conducive to a good spaceship fight or FPS match. If anything, it makes things more tedious. It's less risky to just kill everything, loot the field, and buy a new ship (hint: there is a reason ransoming a pinned ship has fallen out of favor).

EVE combat both lasts longer and shorter than that of DUST. One one hand, a battleship won't last more than 1 minute under heavy fire (in a small gang scenario). On the other hand, big fleet battles only last hours because of TiDi... and even then ships are basically popping within seconds to minutes of being primaried.
Again, it is more tactically sound to kill rather than capture... because if capturing a ship takes longer than killing then you are putting yourself (and your allies) at an extreme disadvantage that may or may not put the overall goal of the fight at risk.
Hell... when I was briefly part of a 0.0 group I was yelled at for looting the battlefield that we had just won... because looting was "dumb and puts everyone else at risk!"

Against a structure... not a ship. Structures would serve as a better place to hold DUST/Legion battles as they have timers that are guaranteed to span hours... allowing the defender time to respond in a less panicky "oh ****, just blow up everything and be done with it!"
