Music in general EVE, not just for pirating, The Postal Service is really great. Best song by them for pirating would be Natural Anthem.

Real Pirates go with style, like a few others already. That said mine are:
1. Chopin - Nocturnes performed by Artur Rubinstein - priceless to be carried to your next kill by it
2. Nigel Kennedy - "Lullaby for Kamila" - always makes me smile when I pop one listening to it
3. Nigel Kennedy's performance of "Flight of the Bumble Bee" - makes a good laugh when you fly an interceptor
4. Nigel Kennedy - "Eden" great when you fly a Pilgrim approachign and uncloak right when the song goes fast in its midth
In times past I also heard Mahler's 4th and Chopin's Polonaise but it doesnt fit as good.
5. Mahler - "Kindertotenlieder" and Chopin's "Funeral March" is needed when you fly back home in a pod
