Another world
Every single one of these games changed what i knew games to be, for me.
Civilisation was just ultimately playable over and over again. Something that is lacking in a lot of games. I still play civilisation II now.
Elite: Frontier was the first game I ever played where I could truly go where I wanted, do what I wanted and play forever. Very liberating, and the reason for GTA's success in the future.
Lemmings: who needs to explain that 
Mortal combat for taking beat em ups to a new level. Some peeps were a street fighter lot and i'd band them in the same era of change (altho I suckzared at the SF moves whereas I rocked at mortal combat ).
Another world was another of those groundbreaking titles heralding a change in how we looked at games. It took the normal platform game and made it so atmospheric it was untrue, simplifying the graphics in a way as to enhance them. It led to the excellent flashback as well. When i remember the opening scene, of jumping the deadly leaches so as to get to the point where you evade the shadow lion I still smile today. Truly a very involving scene.
Special mention:
Eve online, I love this game but i do have my problems with it. The level to which player skill is important is something that in this game bothers me, and something I believe is actually falling in the game. Interceptors and some of the other ships are something that i think bucks this status quo but a lot of the time the skill is in the setup and not the pilot; or even worse in the ship type / skills / numbers. Dont get me wrong, pilot skill DOES exist and it DOES matter, but i think it should matter more is all (dont shout and / or flame or i'll buy a Britney record).
Soul Kaliber: This was the first beat em up i played where you could deflect an attack, rather than do a deflect- attack. There were probably others, but meh :D. I remember at uni having a fight that got to 36 deflections. The frustration was unbearable as the blunt burn't down :D.
Xcom: the whole series tbh. Loved em.
