While I agree with you on many things, we'll never see eye-to-eye on this one.
I see nothing wrong with AFK mining. Or more specifically, semi-AFK. You need to weigh the cost effectiveness to see if it works for you, though. Sure, it's less efficient, but you can be focused on another character or homework or whatever. So anything you make is gravy.
If you tank your ship, stay out of popular systems and work belts that have a some other ships that are more tempting targets for gankers, you can keep your losses to a minimum.
The thing is, once gankers land on grid, you are pretty much screwed whether you are AFK or not. You can spend all your time running d-scan, labeling known gank corps and stressing out every time someone appears in local. Or just accept that you are going to take the occasional loss but in the end you'll come out ahead in ISK while doing next to nothing to acquire it. It's your choice.

It's not a good idea to post it on the forums (because people can find out where you are in Eve if they know your char name), but the majority of people mining in Eve are semi-AFK at least part of the time. It doesn't require your undivided attention. There are only a few areas of high-sec that I've come across that have frequent ganking of miners. If you are mining in a tanked Procurer or Skiff they will ignore you for an easier target (unless you go out of your way to provoke them).
After you know what you are doing, you can get a Retriever as a 2nd mining barge that you use when you are paying attention or confident the system is safe. It has a bigger hold so you won't have to haul to a station as often.
As an aside, I prefer to mine in an area where CODE operates. It makes for a more interesting game of cat and mouse - and it scares off some of the mining competition.

Then go trading.
With same amount of attention you can not only make way more ISK but also at a lot lower risk if you know what you are doing.

I'd say that if you're going to mine, keep at least one eye on the screen, and if you have to go AFK, either dock up, or find a safe and logout until you can come back. Barring some ISBoxer rolling through with a bunch of zombie barges, the rocks should still be there when you get back.

Roughly 12-15 minutes to fill. You will need to cycle your mining lasers as needed.
The Procurer Pretty straight forward stuff:
