I just started playing Eve just over a week ago and have really been enjoying the game so far. Thus far, I have been running a lot of courier missions to generate income and get familiar with the game, also because my character is setup to be a miner and isnt that great at combat. All the agents seem to be giving combat missions now, and I get spanked every time without even coming close to scratching my opposition. I've managed to escape everytime without losing my ship, but it's frustrating to lose standings points attempting hopeless missions.
I don't want to start another rant about the lack of courier missions, but rather would like some feedback on what options are available, in the meantime, to generate income for a character that doesn't have an advanced ship or a lot of means to get income yet and doesn't want to pour all their skill points into combat skills. Please keep in mind that I am very new to the game.

Buy your race's mining frigate and do some mining. That will build your wallet faster than courier missions will anyway. After you have sufficient ISK to buy a combat frigate and properly fit it, then you won't have any problem with the combat missions.

I mean I sympathize about this ridiculous business of just making all the courier missions go away...
but the point of mining is that it is a good, predictable and profitable way to MAKE MONEY.
So if your objective is to get money and you want to be a miner...why wouldnt you just go mine?

Boring? There is nothing more boring than level 1 courier missions. And he doesn't need mates to mine. High sec mining is the perfect solo activity.

I had previously been mining while doing the courier missions as I passed asteroid fields en route, but I felt like I was making a lot more money off the courier missions as I was only making around 14k off each load when mining. I am currently running a Navitas and was trying to generate enough cash to upgrade to a better mining ship. Maybe I'm going about this all wrong...

No, you're not going about it wrong. There is no wrong way. You just need a little patience. The ISK will build surprisingly fast, but not overnight.

And work on your industrial ship skill, once you get one of those you'll make a lot more from mining then you ever made off those stupid level one courier missions.
And if you get bored then you'll be able to do level two courier missions...oh wait, never mind.
