Two questions:
1. If you can already fly a Bustard, why not use a Crane? They excel at bypassing threats in losec.
The trick to bypassing gate camps is to not make yourself a target. Fitting warp core stabs and assuming that's enough will get you killed the moment they bring N+1 points, or a scripted HIC. But cloaking and getting into warp before they even get a chance to lock you is highly effective, even if your cargo is more limited.
2. Why do you need that much cargo space to haul PI goods? Using advanced processors to manufacture higher tier products compresses your goods considerably.
One of my characters runs 4 PI planets in losec, empties them every 2-3 days, hauls everything in a Nereus, and makes ~10mil ISK per haul. This setup isn't optimized and my PI character doesn't have maxed PI skills, but it's still good "passive" income.

I'm going to give the Epithal a shot and see how it goes. The "factory planet" method is tried and tested, just not how I chose to do losec PI. With that setup, needing the extra capacity makes sense and the Epithal is likely your best bet for a cheap, high volume hauler. I'd still fit for agility/warp speed instead of warp core strength and tank, but a good scout is a better option than either.
One other thing to be wary of is POCO camps. You will be most vulnerable not at a gate, but when you're at a POCO with no immediate escape and, most likely, distracted with PI instead of watching your overview.
