What is the difference? Which one do you find is better in PVP and battles?

Different ships have bonuses to different weapons. Minmatar use Projectile, gallente and caldari use hybrid and amarr use lasers. None are better than the others they are just different.
Short range:
Hybrid (blasters): High damage, short range
Projectile (autocannon): Low damage, medium range, can choose damage type
Lasers (pulse Laser): Medium damage, long range
Long range:
Hybrid (railgun): Medium damage, long range
Projectile (artillary): high alpha strike, low dps, medium range, low tracking
Laser (beam laser): high damage, medium range, high tracking.
There is more of course like cap usage, ammo usage etc.

Quick run down:
lasers:
- don't use ammo, uses capacitor energy
- do only EM and THERMAL damage.
projectiles:
- use ammo, no capacitor usage
- do any type of damage, and some ammo do 3 types of damage
hybrids:
- uses ammo and capacitor
- do only KINETIC and THERMAL damage
Better is subjective.

Without good skills projectiles are pretty gimp.
Lasers are pretty much the same.
Caldari are probably the best all-around faction in the game.
With low skills missiles are very powerful, shield tanking gives you more room for error (lag), no need to know anything about tracking or transversal, awesome EW ships, badger2 can be shielded really high for running valuable cargo into Jita, ratting is effortless.
With proper skills and tactics, the other 3 factions can be just as good, it just takes more time.
