So just a quick question. How do you join NPC Corps? I've read people talking about it in various threads on here...yet the one NPC Corps I try to join always says "not taking applicants".
Any insite? Thanks :)

You're in one by default. Everyone starts out in an NPC corp. When you join a player corp, then leave it, you'll go right back in to another NPC corp.
Think of it as the default setting, instead of being in no corp at all. It doesn't really mean anything, unless there's some roleplay that you personally want to partake in involving an NPC corp.

That's pretty much the idea...I have a concept character, and would like to join up with The Sisters of EVE. Is this possible?

Nope. You start out in one of three corporations based on your race (it's the school you choose for your character when deciding what skills to get). If you join a player corporation and then leave that corporation, you get dropped into an NPC corp based on your bloodline (each bloodline has only one corporation, and each of these corporations is unique to that bloodline).
So no, no NPC corp for you.

There's Sister Servants of Eve, which I think is an NPC faction. Then there's Sisters of Eve, which is a corp and I *think* it's a player corp. Send an eve mail to a person called Denise Ashley and ask her about it. Her main is a member of SOE.

You cannot join the NPC corps via an application like you would join a player corp. If you resign from a player corp, you will be slotted back into an NPC corp, but you don't get to choose which one and it certainly won't be one like the Servant Sisters of Eve (SOE & SSOE).
There are player corps that align themselves with a particular faction or outlaw corp. For example: PIE is an Amarrian loyalist player corp, Coreli is aligned with the Serpentis corp and, of course, my corp, True Core, is aligned with Sansha's Nation.
You could always start your own corp, ofc, and align with whichever NPC faction you desire.
Some others:
Black Rabbits (Guristas) Vindication Angels (Angel Cartel) Cyrene Initiative (Gallente Fed) Kimotoro Directive [Alliance] (Caldari State)
These would generall be referred to as RP (roleplaying) corps; just in case you see that being referred to.
