While it would technically work. A PCI card is the worst thing you can put into your computer as far as performance goes.
A ATI 4850 will not power 3 displays on its own, but a 5000/6000 series card will (Nvidia will not. They all are limited to only 2 displays per card so no surround or anything until you go SLI).
You could pick up say a 6970/6950 and like said above, get a active displayport to DVI connector (unless you have a DP capable monitor) and you would be golden with 3 displays and easily enough power to power them all.
I also reccomend a 2G version of those cards to help allow you to run the textures and such at max across 3 screens. It may not need it at 1080P, but it may use it for 3 displays.

And considering my experiences with 4800 series cards, the 6950/70 will be faster, and cooler without using more power. Another thing. The 6850/70 reccomendation is just a high end ballpark incase you want to play eve maxed out on 3 monitors, I believe it could do it well. If you are on a budget, any 5000/6000 series card with 2dvi+DP or 1dvi/1hdmi/1dp can do 3 monitors, but you wouldn't want to go much lower than a 5770 id say.

Also make sure if you havent already, to follow the steps to have 2 seperate eve client's with 1 eve install. It works great and allows your client to remember what monitor had which fullscreen window for each account. You will launch the game with 3 separate shortcuts.
