I mean, the folder is >15gb at the moment, what happens if I delete everything and reinstall the client? Will the launcher re-download everything and fill those 15gb again? |

I would only assume that it would if you had the box checked to download all files instead of waiting for them to download later when you need them.
Destiny always seems decades away, but suddenly it's not decades away; it's right now. But maybe destiny is always right now, right here, right this very instant, maybe.

The short answer is, "Yes, it will again be that size".
There are 2 installation clients:
- Default (slim): Installs minimum EVE. Downloads assets "on demand" (when you encounter them in EVE). The more you play, the more you encounter, the more you download until the cache is fully downloaded. Additional cache assets will be downloaded as they are introduced into the game. - Offline: Installs full-sized EVE with the full cache. Additional cache assets will be downloaded as they are introduced into the game. If using a Mac, for now, you only have the offline installer.

My recommendation would be to clear other items off your computer to reduce disk space. As the EVE cache will eventually grow to fill whatever space you've freed by deleting the cache. |

What's your point? That's pretty average for a game these days.
Might be time to invest in some storage. It's cheap and you'll need it. I have 5 terabytes internal with another 3 terabytes external backup and even that's starting to feel a little light.

I don't even want to think about adding up all the storage I have lying around me. I'm at 20tb between two towers, a laptop, and the media vault.

You should look for cache files or other crap manually.
there's also cached data in appdata, assuming you are using windows. it's a hidden folder, google it.
