As pointed out before, it's probably got biblical roots ( EvE, New Eden, ... ? )

What's wrong with circular logic in this case anyway.. they came up with a backstory and a setting first then came up with the name based off the backstory... Most of the time you don't think of the name and then build the game and backstory around it...

Eve is the name of the wormgate from which all humans in this galaxy have arrived. Why?

If you don't get it, I'm sorry but I doubt I can help without breaking the forum rules.
Given an object with those characteristics, there are many names you can give it - but most of them would have been very bad for marketing.
So CCP turned the metaphore up one notch, and came up with Eve, mother of everyone.
As for why it's capitalized, that's because it makes for a good logo.

Its simple the wormhole used to get to New Eden was called the EvE gate any other reasons dont really hold up and call it circular reasoning if you want but its the only answer that make sense

Damn you! I was about to say that, but I woke up too late.
Yah, I was confused as to why a game would be named after Eve (Adam and Eve) but after watching the intro movie, it made sense. Eve gave birth to humanity, and in a way, discovering the universe on the other side of the wormhole, was a second rebirth.
Pretty cool. Of course, Everyone vs Everyone also works!!

This subject reminds me of a painful way I had to explain what EvE-online was all about and meant to my wife.
I happened somewhat like this:
"Darling, we need to talk." My wife was in tears and upset. " Ain't I interesting for you anymore??!! Do you really need those filthy websites and squander your money on that??!!"
"Huh, what do you mean?", I replied. 
She shows me our creditcard invoice which clearly states the EvE-Online subscription.
She'd clearly mistaken the name of this game for a ****site description.
Luckily, a peek at the website of EvE-online and "a thorough demonstration why she indeed was interesting to me", settled this argument quickly.

Eve was the name of CCPs first female hamster. She was strong and the fastest hamster ever.
Unfortunately she died after an ancient patch and was mummified.
Tomorrow she will rise from the dead with CCP assistance!

First things first it's not meant to be written EvE. Eve isn't short for anything: It's the name of the wormhole that went to New Eden. The name Eve refers to the wormhole being the 'mother' of New Eden (like the Eve in the bible). If Eve hadn't opened, New Eden probably wouldn't have been discovered.

To be exact, EVE isn't the name of the new universe (you'll find that that would be "New Eden").
EVE is, according to the fluff, a word found on the ancinet structure of the EVE Gate. Non one knows what it means, in game or out- and the fact it's always capitalised suggests it might be an acronym. I think. Might be wrong. Been a long time since I read the fluff.

"Minge Online" just doesn't have the same ring does it?
They missed a trick for the leet kiddies, and could have called it Ev3.
