I'd guess that it's actually EvE as in PvP and PvE, but even if that is the case I doubt the E is environment, one of my corpies suggested Everyone, which seems likely. Does anyone know? and if not what ideas do you have?

Backstory 
Bible - Eden (A new beginning) - Adam and EVE - EVE the game.
So pretty much EVE means Girl. Or of course, Entertainment Vernacular Entiendo!

Ok, but why'd the devs call the universe EVE. The word has 2 meanings that I can think of: 1: A female name, with a notable example early in the bible. 2: The edge of some change, ie new years eve, or eve of the apocalypse. 3: It's always in caps, it could be an acronym.

As the "eve" in the bible is the mother of humanity, so too was "eve" the wormhole a mother to a new civilisation. The system "eve" is based is called New Eden. The ties were pretty obvious I thought...
Also the EvE thing is purely marketing, although it is interesting that pvp and pve developed out of eve.

It really seems to fit. Eve was the wormhole that took the first people into the EVE Universe, aswell as being 'The first land'

There were two galactic gates. One near Earth, called "The Adam Gate" and one in our region called "The Eve Gate". They were used to stabalise the wormhole that joined the two regions.

From what I can remember from all of the elements from the backstory...

A stable wormhole was found that allowed humans to travel through it. It was soon discovered that the wormhole was not as stable as was though and gates were built at each end to reinforce it.
The 'galaxy' that the wormhole lead to from Earth was named New Eden, as was the star system that it immediately lead to.
The wormhole eventually collapsed fully, cutting off the colonies from supplies and most died out. The memories of their origins (and the story or Earth and "Eve") faded in the minds of the survivors.
Remote exploration to the collapsed wormhole revealed the gate that once guarded it. The most prominent of its markings (and the most understandable) is one word - "EVE". While its true meaning is unknown to the people of New Eden, this term was considered to be of unique significance and eventually became another name for the world in which we reside.

So, even by the backstory we aren't supposed to know what EVE actually refers to. I have heard the story of the gate pairs "Adam" and "Eve", Adam being the name of the gate on the Earth side of the wormhole, but I'm not sure if that was official background or not - certainly a possibility though.
My personal theory is that EVE is indeed an acronym of some sorts, or a fragment of a larger message (or symbol), that has just been weathered beyond recognition by the accident.

In light of the fact that we seem to be alien in origin, we have named the region of space we live in EVE.
But as far as game design goes, since the subtitle of the original release is New Genesis, I would guess that EVE is a biblical reference.

Would be cool if the devs implement a expansion thats contains a secret dimensional gate or a ancient intergalactic gate that was built several thousand years that you must discover from clues scattered all around the EVE universe. This would also mean that all the races would have to help each other which also takes time due th player piracy so on.
Remember, just an idea.

Such as the EVE gate? 
An ancient alien (i.e., not human) jumpgate would be pretty cool though, as a long-term event. We know there are some ruins discovered that were not of human origin, so there may very well be some ruined jumpgate network, perhaps in a decaying orbit tracing back to the current solar gravitational nodes...
