Still new to the game (1month+) so bear with me.
Can dreadnoughts and carriers park in normal stations (high sec empire stations) ? Or do they need to be parked in a POS ?

Normal stations - only motherships and titans are unable to park in stations.

Mothership is the term used for the larger of two types of carrier each race has.

Realize you can't get cap ships into empire space except for the system the ship is first made in. After that you have to jump it down to losec. But yes, other than mothers and titans they dock at NPC stations or outposts in 0.0

mothership is those like nyx ?
hmm.. wait.. u mean a thantos or a moros cant jump into high sec ?

The highest class ship IFAIK that can be in Hi-Sec is a Battleship...

The only two dreadnoughts you'll see in highsec is Chribba's Revelation in the Amarr system or a Phoenix, both built before a patch was released that prevented construction of them in stations (apparently).
Its considered to be a tourist attraction to see Chribba mining veld  .

Actually, freighter is the largest ship class allowed in gihsec. It is the largest ship capable of jumping through stargates. Other capital ships cannot jump in highsec simply because you aren't allowed to create a cynosural field, which is required if you want to jump your capital in that system.

Sorry, I was meaning to say largest 'warship'..
Thanks for that info..so you can build the bigger freighters in Hi-Sec? (ie: Hulk, Oblisk etc..)

The Hulk's an Exhumer, not a Freighter.
But yes, you can build Freighters in high sec POS.
