Rifter for sure. I loved that ship my first year of eve. Use to get 5 to 1 kill ratios in that thing. Even snagged a few cruiser kills in it solo.

Something about the Apocalypse. The name. The gleaming, monolithic hull. The sheer size (back when battleships were the biggest, baddest things out there).
At the end of Beta, on Armageddon Day, when everything was lagged out, I bought an Apocalypse. Because it was that awesome.
And of course, the Imperial Apocalypses were simply amazing. I love telling my friends the story of the Amarr Championship and the prize ships, particularly the Impocs. The Apoc may not be that great of a ship in use, but it is beautiful in its own way, and I think it symbolizes the Amarr better than any other ship symbolizes its race.

I dunno, the Bellicose symbolises Minmatar quite well.

The Bellicose is the iconic ship for me. It's a jack of all trades, nimble and fast, and yes, it does have the distinctive Minmatar look.

For me its my trusty Caracal Class, my first cruiser (oh how i got yelled at for buying a combat ship instead of the mining Osprey class!) I used to poke around into low sec with it, feeling adventurous, and loving every moment of it!

My Rupture was the most exciting ship by far. It got me hooked to the game and I flew it for months as I dedicated all my training towards flying a Munnin. Oh boy was that a let-down.
But the Rupture is a thing of true beauty. - - - - - - - - - - - - - - - -

When I started about 3 years ago it was the all conquering Thorax.
As a Caldari wanting to make my isk mining sucked hard in a Moa or BB so I trained up for the Rax and was amazed. The idea of a Cruiser with heavy drones also never ceased to amaze me. got my 1st kill with it. This was in the days when you aproached a lone rax mining with caution..
But the fact it was also a great blaster boat just was the icing on the Cake.
Absolutely awesome in it's flexibility.

I would like to submit the humble saber. (though I dont fly one)
Nothing screams adventure and excitement than getting your pod into a flimsy ship that you have to get into the middle of an enemy fleet to use.
That and it kinda looks like a grinning skull from the front, all it needs is a few bodys straped to the hull and a Jolly Roger.
The bad side is if you get podded you need to weave a rope out of your back-hair and lash some turtles together to get home.

For me the ship that mostly symbolises EvE adventurousness is the Typhoon. It's fast and versatile and it needs a HUGE skillset to enjoy properly. However, I still think EvE needs more and better tactical warning sounds.
