One other "trick" I've read that some miners will use is dropping "spare" jetcans around their mining ship to form something like a pyramid shape around your miner (each can would be kept just under 1.5km from you). You put a bookmark in each of them to keep them active and only drop your ore into one of them (which would be the one your hauler would have bookmarked and unloading from).
If you see an ore-thief approaching the can that you are actively mining your ore into you just move most of it to a can that is farthest away from the thief. As long as you are within 1500m of the "spare" cans you can simply drag the ore out of one and drop it into another.
The reason I say move only most of your ore, and not all of it, is because you actually want the ore thief to take what you've left and jettison it into his own can... he will do this in hopes that you try to steal it back. But by doing so he has now created a jetcan and cannot create a new one for a couple of minutes (I don't remember the timer off the top of my head). This is important because odds are the thief will be more than 1500m from his jetcan if he tries to fly over to one of your other "spare" cans and happens to open the one with all your ore in it. He won't be able to drag all that ore out and dump it into his jetcan if he is too far from his own, which might give your hauler the extra minute or two it needs to warp in and unload before the thief can create a new jetcan and steal the rest of your ore.
You can also play "musical cans", so to speak, and just keep moving your ore around, in an attempt to buy a bit more time for your hauler.
Ultimately, buying time is all your doing, though, as there are easy ways around this if the ore thief puts there head to it. Again, a bit of time might be all you need, though, and if anything, it might make it a little more interesting for you, rather than just watching your ore go bye-bye without being able to do anything. :)
What might be very fun, if you're in a gang, is have every spaced roughly 2-3km apart, with a jetcan between them all (thus the jetcans are within 1500m of two people in the gang). If a thief approaches, you dump your ore into a can between you and a gang mate, he then moves it further down the chain, and in less than a minute you've moved the ore several km away from the thief. :)
