I've never come across an npc hauler or miner, and wondered if it would be cool to have random convoys of them appearing from nowhere and be able to attacked them. They'd probably have to be of a pirate factions, so concord don't kick you a**. Or only have them appear in low sec then they could be just miners or haulers, and we could attack them freely.

Pirate haulers can be found in asteroid belts from time to time, such as the Guristas Ferrier. They can be any ship class, from frigate on up, and won't aggro you directly even if you fire on them. When destroyed, they drop a large quantity of a specific mineral. Ferriers usually drop about 50,000 units of Tritanium or 25,000 Pyerite, for instance.

Yeah, but stumbling upon a whole convoy would be cool, loads a'loot.

They're in high-sec. NPC convoys are always coming and going from stations there.
If you shoot them, you lose faction, but Concord won't mess with you and you only really have to deal with the station guns. If you find a minmatar convoy flying to a caldari station, like they do in Aakari, then the sentries don't even open up, and you can bust up those poor haulers all day.
As to loot, well, I hope you have a real craving for holoreels and tobacco.

About a year ago I came across a fleet of npc's in a belt in sharuviel system. I ended up with alot of jaspet ore and mex. Unfortunatly I have never seen them since...

I would like to be able to higher NPC haulers, like the ones you see going to anf from the stations, to haul some of my assets around. By allowing this, it would open up a whole new prospect of obtaining new and more valuable loot from them when you pop them. Also if the npc ships did fall under attack they would send a distress call to the player / corp that hired them (for the purpose of standings and to put an agro timer on the attackers for upto 30 min to 45 min.

You only loose standings to the NPC corp that launched the convoy, and not faction. As for how to do it ...
If Corp A launches a convoy, and there are no other stations from Corp A in the system, then the convoy will go to Corp B's station. When it arrives you can shoot it. If there are two stations for corp A, then the convoy will always go to corp A's other station. Sometimes the guns won't shoot you till you are 50km away, sometimes they'll shoot you when you are 300km away ... so be ready to warp away.
As for the loot, just about all the trade goods drop from these guys, it all depends on who you shoot. Some things never seem to drop at all. Wise use of the item database will expose who drops what. Contraband drops will depend on the region where you shoot them.
Time and effort all told, doing this yeilds about as much ISK as lvl 2 or easy lvl 3 missions or mining low ends.

That's handy info, thanks. So, is it possible to get your standings so low with an NPC corp that their stations will shoot you on sight?

There needs to be more convoys and better loot. Has anyone tried to salvage parts from these aswell?

Yesterday I ran on a serpentis convoy, it had about 350k mexallon and 4M tritanium (2 industrials) with a 2 BS escort.
It's crap I didn't have my industrial around, I had to haul mexallon in exequror...
It was my first convoy and I really didn't expect to meet one, next time, i'll be ready 
I never looked too much to the empire convoys, how do you know what corp they are from? -- Pocket drone carriers (tm) enthousiast ! Flying Vexor and Ishkur, Myrmidon was too slow, got ganked by 3 BC and a Megathron...
