I recently acquired a Mining Drone I and I'm wondering does it have a seperate cargo hold or does it just bring the materials to me that i set it to mining? I ask this because it says that it has a capacity of 1200.0 which could really help me with collecting metals and the such.

It will grab ore, and dump them in your cargohold. You don't get any extra carrying ability.

Unless you have someone defending you from npc rats, the drone space is better used for the time being with defensive drones. You will find that rats will kill off your mining drones quickly costing you more ISK to replace than they pulled in ore during their short lifespan.

But there's no reason you can't use both. I used to keep a set of mining drones and a set of combat drones in my drone bay. When the rats showed up, I just recalled the miners and released the combat drones. Once the rats were dead, I switched back to the miners.

Mining drones are a very good way of increasing your isk/hr intake via mining, however, that means you mine faster, and thus fill your cargo hold quicker.
Mining with friends (a couple co-mining, a couple hauling the group's ore to a station, and a couple more to guard everyone from either NPC rats, or other trigger-happy players) offers the best mining isk/hr, and is the most fun too. *

This requires additional drone space that the new miner won't have. Sure it's doable. When just getting started it's better to focus on only combat drones. Change that once you are in ops with defending player ships or have more drone space than you can control at one time.
In the drone interface you can assign each drone to groups, so you can control the defense drones and mining drones without having to give each one direct commands. So the strategy Kaylee suggests is easily doable once you have enough drone space.

When you're a new player/miner, I'd stick to 0.9> space and mine scordite. No need for weapons since there are no rats and scordite is at this moment one of the most profitable ores in Empire.

More to the point, ignore that "Capacity" amount. its one of those meaningless databse numbers that has no effect. You want to be looking at the Minig amount.
Drone goes to range of rock, orbits for one minute. Drone collects the Mining amount worth of ore. Drone returns to scoop range of ship, dumps mining amount in your hold, repeats.
Remembering this means a few simple tactics for drone mining.
Mine the rocks close to you when you can. cutting down the travel time greatly increases your yield over time. Remember that there is no such thing as a partial cycle for a drone. If you recall them, anything they are currently mining is lost. (more like an ice harvestor then a mining laser, for example) And finally.. mining drones die fast when rats go after them, and they Will. so keep an eye on them and be quick to scoop up.
Solid drone skills, for combat drones And mining drones are some of the most important "support" areas a miner needs to have trained. Remember that, and be nice to your drones!

I just began with a Bantam to mine...do the drones take up cargo space? Do I have to calculate when to stop mining so that I have space to take my drones home? What skills do I need?

Skills. First, you need Drones.
Then, Mining Drone Operation to control mining drones, and Scout Drone Operation to control Light and later Medium scout drones (for defense).
Then, there's a whole host of other skills to improve your use of drones. Drone Interfacing increases damage/mining yield of drones (requires Drones at lvl 5). Drone Navigation makes them faster. Drone Sharpshooting improves accuracy/optimal range. Drone Durability makes them tougher.
There are also drone specialization skills to get into T2 combat drones. You can get T2 mining drones by training Mining Drone Operation to lvl 5.
