Is there a ship you would call the "ultimate" Hauler? Oh and what are the "must have" skills for this ship as a hauler?

As with many things in Eve, there is no simple answer to your question as it all depends on what you want to do. If you simply need as big a ship as possible to move stuff through high security space from one station to the next then a freighter is what you're after. If you need to move stuff past gate camps then a transport ship is probably more in line with your needs. If you want something that is great during mining ops or will get you on the road to transports or freighters then an industrial is right for you (and is a requirement for transports and freighters).
As for the details of each type of these ships, follow the link on the left to Item Database and you'll find everything you need.

Gallente Industrial 5 (To fly it) Hull upgrades ii (for cargo expander iis) Astronautic Rigging 1 (for cargohol optimisation rigs)
Add GSCs and you get the biggest hauler possible.

I would suggest you get the program called QuickFit (there is a link to it in the thread you reach if you follow the link in my signature). With QuickFit you can test out a bunch of different ship setups without having to actually buy said ships or the modules for them. You can then see how much space you'll have, how fast they'll be, etc.

If you want to go by training time, the most bang for your time is training up for a Mammoth, this is dependent on your attributes as to how fast it will actually be, but since you only need level 4 in order to fly it and it can almost pick up an entire jet can within its hold (if you put Giant Secure Containers inside it you will be able to, but thats another topic) it is definitely worth consideration.
Here are the figures that I came up with:

It all depends which level (tier) of hauler skill you want to train up:
tier 5: Itty 5 (overall best cargo capacity) tier 4: mammoth tier 3: badger II tier 2: hoarder tier 1: bestower

Hauling the "most" is not always the "best".
Being able to warp off the quickest can count for a lot, if you're trying to elude gate camps. ------------------
