Amen friend. This isn't so much a game as it is a second "you". And I agree that more direct control over the ship in flight would be frustrating rather than fun.
To use the old "WASD" control set up for instance. While I would dearly love to hold "D" to execute some awesome turn while holding down a button for afterburner and mashing "SPACE" to fire my guns while toggling "1" "2" and "3" to activate deactivate modules....see where I'm going.
Yeah it would be awesome and actually give you a sense of steering your ship, with all that has to happen in spaceflight and combat, the EVE UI handles it very well.
I play two MMORPGs currently, World Of Warcraft and EVE. I play WoW when I need my control fix. I raid, I PvP, I level a character. It's awesome. But I burned out after a little over a year. There is this pressure to "max level" your character to level 60 and raid to get "uber" gear. Ok, I did the rush, have the "uber" gear...now what? I level a second character etc. I still love the game and play a few hours a week but I needed a break.
I am also a bit of a Sci-Fi geek and have been looking for a good space genere MMORPG and EVE was/is it. I love the fact that I can come home from work and do something different each night. Whereas in WoW I would just sit and grind to level. In EVE I can sit down and mine for an evening, run agent missions, PvP, or just explore. It's fun to take a shuttle out to low sec space to see new areas (with a good clone backup mind you!)
As it has been said, the ability to train skills out of game is stellar (pun intended!). I love the fact that I can set a skill to train and go to bed and get up and it's done. I got something for essentialy nothing, I clicked to start the skill, logged out and it trained while I was off dreaming of getting my first Battleship, and maybe even a Titan (might as well dream BIG right?)When I get up the next morning I then start a new skill and go to work, I get home and BAM, another skill level. =)
Granted, I know this isn't always the case as some later skills have longer training time, but the main point is the game lets you have a life outside the game while your character advances. I work for a University and have a busy work schedule and an active social life. EVE is an awesome game because it lets me be that hero in the sci-fi novels I read, It lets me be a daring pirate or a business savy corporate CEO but on my schedule.
This is a niche game. It seems to be a love it or hate it relationship. For me it's a love it.
One more time though, Jeem, I do see your points and respect them. The game isn't perfect and does need some tweaking. Every game does. CCP does have a solid program though and an excellent product. I hope that you find your niche in the EVE universe and begin to enjoy you time.

P.S. I noted that in one of your posts you said you had 4,000 skill points. Was that just starting? I made a custom character that upon first logging into the game had around 12 skills and 3,600 skill points, before I even trained anything. It deosn't take long to put a couple more levels of Frigate under your belt to be able to pilot a better frigate. Mining can be boring but switch it on and off with agent missions. Before you know it you should have the 200k needed to buy and outfit a new ship. =) I mined more than I ran missions and had over 3 million ISK at the end of my first week of play.
