I'm assuming the answer is no, but is it possible to change what shows up in your character sheet as your career and specialization etc.?
For instance, if I no longer wanted to be an Entrepreneur.

Not without deleting your character and starting again. But it really shouldn't have any effect other than role playing.

Just start training other skills, why would you want to lose skills confuses me, didn't even know a career and specialization even was given to characters.

It was one of the steps you did when you initially made your character. 
The only real impact the choices made were on how to assign the Skills you initially started with. For example, an Entrepeneur would start with a majority of skills in Trading, while a Soldier might start with a majority of Gunnery or Spacship command skills.
The skills one starts with now are just more noticeable, since the "bump" of skillpoints that average about 800K - 900K, instead of the 100K-ish (I think it was that low) that most players started with a year or so ago.
Also, OP.. no, you cannot filter that out. That's also a fairly new addition, showing the choices you made at the start of your career. The Character Sheet had a revamp a while back; it never showed before that.

Only you can.
To see what you look like to another pilot, do a Show Info on your ship while in space, then click your face/image.
(If you do a regular Show Info on yourself in a chat-channel, it only pulls up the Character Sheet)
