Perhaps they are blurry for you? Then you may need to hit esc, go under graphics tab and play with the texel alignment until the fonts are nice and crisp. If you just talking about them being too small well, let me check something maybe there is a way to help you.

Well..I increased my Screen size. And I changed the colors of the UI to a more pleasing on the eyes (for me) tone..and it seems to help. I also have to learn to use the minimize buttons so that I still have a game screen...but I am stil very new..

You could try combining your menus windows to take up less space. For example tossing your "Peoples & Places" window in with your chat. I always combine my Cargo bay and Drone Bay windows as well. Scanner, unfortunately is annoying when combined with stuff, as it's one of the main warnings towards threats.
What also helps is zooming away from your ship, for some reason it feels less cluttered.
Just some ideas of things I do when I play on the systems at work. They can only run EVE at the lowest resolution, so the windows tend to be massive.

Fonts need to be adjustable for everything. LCD screens are fixed resolution so 17" LCDs run at 1280x1024 and the fonts are headache material. Can we have a developer response on this issue please.

You beat me to it.
Everything looks gorgeous and sharp..and it's only because of that I can read the text at all. Luckily I've found that as you gain experience you don't need to read most of the text. You just learn to recognise the window layout.
But really;it seems silly that the game doesn't allow you to adjust every font. CRTs are a dying technology and ****ing off LCD users is going to limit subscriptions. -- (Battle hardened miner)

Change your whole font completely. I found that the fonts available here were actually too large to my taste. But it may fit you (Verdana is nicest):
