I would say:
1) Burn Eden/Terra - Purely because they pvp for the fun of the game. I think with my 13 million skillpoints in pure leadership, with maxed skirmish skills + Skirmish warfare link, + Skirmish Mindlink... would do flippin wonders for their dictor pilots, can you say 17k m/s saber pilot with me @ fleet command position.
2) MC - Contract after contact, taking me all over EVE... that would be nice to see differnt skys every few months ;0
3) BoB - Ditto up as same as MC, larger goals, bigger accomplishments
4) - nada 5) - nada
All things being equal, I really like my alliance and woulda put them on the list but op asked to refrain from that. Lots of targets, underdogs, but facing daily encounters with some of RA's finest, offering up good times when I log in.

1. Mercenary Coalition
There is no doubt that if you yourself have the stones, MC have the experience, willpower, funding and resiliance to bring it.
There's two sides to fighting powerful enemies, the first being those who simply can't adapt to certain situations (I believe most alliances are in this category) - who will just get owned in the face, and have no fun. The other side is those who play eve in order to seek a challenge; those whom couldn't be happier than if they were being anally violated by a powerful enemy.
2. BURN EDEN
Long-time enemies of ours, BURN EDEN have long ignored what some people consider "proper etiquette" to gameplay in EVE, and pull out all the stops in order to have an absolute blast doing whatever they are doing. It would be a sin to omit them from this list. Some shallow people may hate them for the way they choose to play the game; I suspect those people aren't enjoying the game as much as BURN EDEN are.
3. [G]
No, not D2. And yes, I know they don't exist any more.
[G] had what it took to be a serious opponent. If you took a fleet into their space, they would retaliate effortlessly, and either dispatch you or die trying.
I have fought G on numerous occasions, and I built up a lot of respect for them. On one occasion, a -PH- fleet I was in engaged them with pretty equal numbers, around five bs and several support ships. We got the upper hand and won the fight - but five minutes later they were back on our heels (pilots in new BS etc..) and picked off a couple of our bs while we were leaving.
It is a shame that shortly after forming [D2] the alliance degraded, took in carebears and freeloaders, and became "just another alliance". Those guys had potential.
4. Outbreak
Outbreak know how to have fun. They know how to bring death and destruction to the largest and most well prepared alliances. Feared by some, respected by all, Outbreak have imprinted themselves firmly on EVE history and will always be admired for as long as they exist.
Outbreak ran a campaign against us at one point. After royally kicking our ass statistically, we had nothing to say but "good fight".
5. FREGE Alliance
Like stealing candy from a baby; FREGE have grown extremely rapidly, and are an alliance rife with ISK farmers, carebears and newbies. Due to their rapid expansion they have very little infrastructure, hardly any organisation, and not much of a command structure.
So why make the list you say? Simple - this is an alliance which is currently under no threat from a major enemy of consequence. If I were in frege right now, I would be having a great time, leading out gangs and mercilessly executing those small gank squads whom are frequenting their space. And what's more, these guys are well aware that their time is growing short, and are preparing for the inevitable - we may see some good battles in the future, if their preperation is up to scratch.

Intentionally excluding MC for bias' sake:
1. 0utbreak - Marko is my hero. The idea of basically being MC who just shoot whomever they please is appealing.
2. BoB - Farjung is also my hero. I'd have to take a break from POS war for awhile to really appreciate it, I think.
3. UK/CVA - I am a geeky roleplayer at heart.
4. Star Fraction - See #3. Also, I am a rebel without a clue.
5. Veto - Are they an alliance? Is 0utbreak? Do I care? Verone ftw.

As many have said in this thread - Privateer Alliance before CCP stick their sticky beak in was awesome amoutns of fun (well in eve anyway).
The other few alliances I have been in were meh.
I guess MC might be ok.

Everyone says MC and I am tempted to agree but really, how often are they gonna get contracts of the scale and fun of the one they just completed. I don't know what their fee is but I'd imagine for that scale of conflict it's up near 1 bill per day + expenses.
When corps and alliances get too big they don't do the fun stuff as much so I have to say the ones I would like to be in:
1) Outbreak (good concentration of good pilots and not too much POS warfare. 2) Burn Eden (see 2. I haven't fought them personally but I hear they are similar to Outbreak but smaller scale.. I like small gangs for piracy, easier to earn money that way but bigger badder fights are more fun. 3) Red Alliance (I honestly would have joined them about 1 year ago if not for the language barrier, they are good pilots and band together and fight with their backs to the wall like I've never seen before. Most people would have taken a buy out when they were getting stomped by LV + KOS but they turned it around even though a lot of their members had left in search of greener pastures. 4) M.F. (an empire merc corp with a good FC, don't know the guys but it would be kinda fun to war dec newbs in empire and burn them to the ground each day) 5) Morsis Mihi (I think they live in ****ty space but they have lots of pilots willing to get out their and raise hell) CCP: please fix the asteroids in the new regions.

I had hopped joining the Goons would bring that part of the game we were missing, but quickly learned(reminded) that there is just too much negative(blue's) involved in the process.
So if the ability to keep me fighting 23/7 like here at home came up in any one of the following without setting 1/2 of EvE to blue I would not mind joining if they let me make the calls.
1)MC-While their carebear activities are down right scary their capital fights are just one big orgasm in my book.
2)-A- They bring the fight, and have the big toys as well. Thug would need to jump out of the Titan to let someone with a bit more imagination fly it, and cut the mullet. And don't worry guys I can give orders in Russian as well.
3)Outbreak, only corp on the list but they are quickly becoming the new BoB before they owned space. Nothing more dangerous than a powerfull entity without a home to protect.
4)Goonfleet, if they got their act together and lost the Queen Bee mentality, there is just something wrong with people that have killed less in their entire EvE life than I do in a week telling me what to do and ignoring suggestions.
5)***** Alliance, this is the unknown entity out there with the brass set of cajones willing to do what it takes to make UDIE happy.

That's all, i've been in a few alliances, i know a few people in several alliances and from what i know/hear most are utter crap, and the one's that aren't crap just seem boring or too "military" to me

MC - As much as I hate jumping on the bandwagon they look amongst the most fun and competent pilots in EVE. Plus who wouldn't want to work for an alliance that gets paid ludicrous amounts of isk to kill people!!
Burn Eden - One word; ratios (although unfortunatley is not an alliance)
Outbreak - Capital fleets, skilled pilots and lots of killing
Privateers - more so before the nerf, but like any good alliance, they forced the game mechanics to change by being hsotile to too many people
Establishment - This is more on reputation than any personal experience, but word of mouth is indeed a powerful tool

Razor Alliance - In my time I have called them along with morsus mihi incompetant, fighting on their side I saw earnest fleet commanding a sniping group in a nano phoon and I thought there was no hope for them. The pressures put on them though has turned them into the Razor of old who will bring fights regular. They are keeping our killboard full of kills and losses.
Morsus Mihi - Exactly the same of Razor.
FLA - Before they got wham bammed by the alliance they were a poor fighters who just never knew the meaning of give up. They would lose hundreds of ships without making any real impact but no matter what they would still keep coming and keep coming. It was impressive to see. If they had better pilots/strategy on the battlefield with the same commitment they would have been the most dangerous alliance out there. Unfortunately for them that's not easy to find. There is no alliance with the dedication they had.
FOF - Back in the day when Tri was small (about 50 members online at most) we would pick on their pos and it would stem a reaction from about 7+ alliances forcing them to bring 100-200 members to fight us. The challenge of fighting so out numbered is great and when you match or even better them on the battlefield it gave you a nice feeling. Other than that FOF always has and always will be useless. They were the catalyst for so much fun though as they were notorious for crying help every time. :D (LOLLIPOP)
Hydra - Hydra and friends will bring a fight again they need to rely on numbers etc to be a reallly good fight. Nothing wrong with that, as said previously it's a better feeling when you are outnumbered and get results. I hope Hydra continue to be fun.

As I can't mention CVA as that would be cheating here are my five:
1) Mercenary Coalition - Simply a class act. Nothing more to say. My PvP account ain't got the ingame title 'Seleene's fan girl' for nothing 
2) Cruel Intentions - Although they haven't been around long this alliance is made up of some of the baddest badasses that play EVE. Any alliance that has Waywatcher and the Omniscient Order (the best small gang PvPers I have ever seen) in it is bound to be fun.
3) Outbreak - Great PvPers and fantastic sense of homour. I absolutely loved the 'gangsta' battlereport that they made on the 9UY affair. They appear to play this game for the right reasons in the right spirit.
4) FIX - Just admire their 'never say die' attitude
5) IAC - Always up for some fun and have had more of any impact on galactic affairs than anyone ever expected.

2. MC enjoyed most of my time there and the logistics is absolutley awesome. Miss the Conin guys.
3. IAC I've gone from thinking they were awful when SL fought them to having 2 campaigns against them with MC where they constantly amazed, Id imagine with all that booze its plenty of fun.
4. Triumvirate plenty PVP so must be fun. Have become well known in a shortspace of time.
5. Maybe BOB although I hear mixed reports on the fun side, again incredible logistics.
Others Id also imagine are fun are AAA/KIA/Cruel Intentions/Veto and Sniggs alliance.
Corps, Id imagine Outbreak,The Establishment and BE are the most fun non alliance ones.
