What can and can't Freighters do at a POS?
Can freighters deploy the tower?
Can freighters pickup the tower?
Can freighters load and unload at corp hangar at POS?

Freighters can act like a normal ship while in a online, fueled POS. Well with the exception of jettisoning a can. You can take and give to corp structures and drop into an already deployed can.
You cannot scoop or deploy a tower with a freighter since all the above things require an online POS. You can scoop offlined modules, so long as the tower itself is still on.
What I did for my POS => brought out a hauler with the tower, corp hangar, ship array, and a couple hours of fuel.

You can launch all towers and modules with a freighter, as you are not using the jettison command, rather you are launching for corp.

Yes, you can launch the control tower and any of the modules with the freighter.

So theoretically I could load up a freighter with a tower, corp hangar, ship bay, an indy, some fuel and goto town eh?
can I carry a rigged iteron V inside a freighter?

Freighters can launch starbase structures. And you can tranfer fuel from Freight Containters to offline tower, but you cannot put Enriched Uranium in a freight can. That bit of fuel has to come from a normal ship until the tower is onlined.
Assembled ships cannot be put in a freighter. |
