so uh... what do you guys do while your sitting around mining some veldespar until your cargo holds are full?
ive been here for about an 1 hour or so and my ship is about 60% full

Your mining in a hauler right ?
The only time I ever did that was back in the day, whilst I went to sleep :)

Don't mine in a hauler... mine in a ship made for mining (frigate/cruiser with mining bonuses, or a mining barge). Jettison what you mine into a can, then come back and pick it all up with your hauler.
To get your ore into a jet can, right click on the ore in your hold, hit jettison, then right click on the can that is created, hit open cargo, and drag the new ore into that can as it is deposited in your hold .
This way you get the benefits of the large hold of your hauler, without giving up the mining rate of having more than one mining laser.

took your advice and its allot faster
at first i didnt know the difference i thought it was just taking longer because it was a bigger ship

Just be sure to use an unsecure container.
And where exactly will you be doing this jet-can mining?
