Because it looks like a Picasso, for one. And two, it makes the universe appear 'bright'. Now I'm really not a scientist, so i have no idea how illuminated an actual solar system in the midst of a nebula would be. However most of the space backgrounds i have seen weren't bright at all, mostly dark in fact, and my preference would be along those lines.
Now i can imagine that the way space is lit is most likely due to engine limitations, so my hopes go out for the DX10 engine. I would very much like to see darker space, so it gives you a more 'massive' feeling.

That really was just a throwaway comment on my part - I've heard all the complaints a billion times by know, and I still don't understand why this is such an issue for some people. I don't mean to offend anyone, but to me it seems like an incredibly petty thing to be bothered by....

Point taken. I believe that people play games based on their own parameters on what they find attractive or not. For me personally, and i believe a lot of others as well, one of the main points, not as important as general 'fun' but at least contributing to it, is being immersed in the game atmosphere. Visual and audible aids can greatly enhance this sensation.
