Is this effectively possible? If so, what skills/setup should I use? My thoughts...
Highs: 5x Malkuth Assault Launchers
Mids: 1 AB, 2x LSE, 2 Rat Hardeners
Los: 2xPDS/2xSPR (Whatever fits)
I don't have a fitting tool or anything of the sort on my computer here, so I can't really check the specs, but that seems like it would work well... Any thoughts/suggestions? Is this even possible? Should I stick with an active tank?

The Caracal just doesn't have enough shields or a good enough recharge rate to make is a good passive tanker imo.
Try this for missions:
5x Heavy Missile Launcher
1x 10MN Afterburner
1x Medium Capacitor Booster
1x Medium Shield Booster
2x Active Hardeners
1x Reactor Control Unit
1x Ballistic Control II

It works well. This is what I used with my Caracal:
5x Arbalest Assault Missile Launchers
1x LSE II
4x Rat Specific Passive Amps (Comp skills were to 3)
2x SPR OR 2x BCU OR one of each
The Caracal just devours Level 2 missions with this setup. This setup was serious overkill for Level 2s.

I'm running L2s on my industrial alt (who has no AWU) in an active tanked tech 1 fit (3 heavy launchers, 2 assault), but it's really tight on CPU - the only missions that are problematic are those where you're swarmed by frigates spawning close, but the AB helps getting range, and even the standard missiles go out to about 38km
a passive setup with one LSE is about on par for sustained damage and allows 5 heavy launchers with the same skills and you don't even need a SPR for that, but this setup won't deal with burst damage very well (see: being swarmed eg. in Cargo Delivery)
a passive setup with two LSE will almost double the DPS your tank will be able to sustain, but then you need to downsize all launchers because the Caracal lacks the grid - however, 5 assault launchers are still plenty of DPS to deal with L2s so your setup should work well, no need for SPR BTW, fit a BCS or two instead
