You sometimes find Kernite or Omber in high sec systems, but the really valuable stuff is in lowsec or 0.0. If you are sticking to high sec for now then just mine Scordite. The per-unit price may not look that great, but the low volume per unit means that you can pack a lot more (both units and isk payout) into a given cargo hold. If you want the bigger rewards, you have to take the risks. Consider looking for a mining/industrial corp with access to 0.0.

This is the key to selecting which ore to mine. Both the rate that you mine and the effort that is needed for hauling is based on the volume of ore. Therefore the value per volume is more important than the value per unit. Scordite is on par with Omber and Kernite under current market conditions.

In terms of refined value Kernite tends to be the most valuable now but that's if you're refining it into minerals.
You'll find Veld, Scord, and Pyrox everywhere. The premium highsec ores generally follow this rule:
Kernite: Amarr Space Omber: Galente and Minmatar Plagioclase: Caldari (where you are)
Anything higher than Omber or Kern is in low sec or 0.0 and Spod, Dark Ochre, Bist, Crok, and Ark are 0.0 only.
Jaspet isn't as valuable as kernite or omber, but Hemorphite is both can only be found < .5

Have you done the math on this recently? Last time I did it (perhaps 2-3 weeks ago) bears out Ki Tarra's assertion above. Scordite is the money ore. It beats everything till you get to Jaspet. Sounds counterintuitive but it is not hard to figure out. Scord has been the hi sec money roid for ages.
Here is a link to ore in varioous regions. I am not sure how up-to-date it is though: http://www.fluidorbit.co.uk/

I ran a few calcs in EVE-MEEP and also in a spreadsheet of my own 2 weeks ago and figured that even with the iso crash I'm getting about 600k+ more per can mining kern than scord.
Of course this is factoring in the fact that I stockpile Iso and ship it out to caldari space to offload for as much as 10 isk more per unit. Selling it at deflated Amarr space prices the margin does close quite noticably. I'm at work but let me try running the numbers with Tash Murkon prices and see what I come up with.

Tash Murkon Prices (according to Eve Central and priced to sell)
Kernite: 1.417.595,40 Per 13000m3 (my Hulk's cargo hold) Scordite: 1.357.740,60 Per 13000m3
Lonetrek Prices
Kernite: 1.642.749,08 Per 13000m3 Scordite: 1.282.926,64 Per 13000m3
The common mins, like Trit and Pye are about the same across regions, but Iso is generally higher throughout caldari space as it has to be imported, but I'm also suprised to note that Mexal is selling fairly well in Lonetrek as well, I might have to start exporting it as well! :)
*Your experience may vary, I'm not in game, I'm using Eve-Central for the prices **My pricings are suggestive as I tend to price mins to move volume rather than maximize money per unit ***At work I only have access to EVE-MEEP so maybe there's a bug in the code but I get pretty much the same using my own tool at home.

I am in-game now and currently it does look like Kernite is the money roid by a fair bit. Omber and Plag somewhat better than Scord.
That said prices vary and generally Scord is up there near the top and often beats out all hi sec roids.

One other thing for the OP to note:
Scord yields tritanium and pyerite, and while my esteemed colleague is correct in that scord tends to have a very good return on your investment it's important to take note of your surroundings. If you are off the beaten path and mining in a system that does not have factories you may notice that your scord mins don't sell as fast as other mins because of their high volume. As to move large ammounts of trit takes several industrial loads or a freighter. As early in the game as you are it won't be a problem but it doesn't hurt to check. If you offer a fair price for your mins they will sell but sometimes not as quickly.
