How exactly does it work ?
Is it more profitable than ore mining in a an Osprey ?

Strip Mining is simply normal ore mining but with Strip Miners instead of Mining Lasers.
Strip Miners have a bigger yield and longer cycle than Mining Lasers. This does two things:
1. Increases your yield over Mining Lasers. Not only because Strip Miners have more yield, but also because all the skills needed to fly a Mining Barge (Strip Miners can only be fitted on Mining Barges) will increase your yield also.
2. The longer cycle has in effect that if you are JetCan mining, you will only have to drag ore once every third minute instead of every minute.

so with strip mining you're not justs limited to moons then ?
trying to figure out if i should continue with my osprey with miner II's or just jump into a barge -----------------------------------------------

You take off your cloths, walk around... And go grinding ISK's off these willing Eve players. It's really that easy! 
No for real, if mining is your thing you should definately train up for a barge (retriever would be your first one). It's more convenient and gains more yield and cargo space. Down side is, that it takes (some) time to learn the proper skills to get a barge with t2 strippers.

Moons? To mine a moon you need a POS set up at a moon in 0.0. I think you are confused here.
Mining lasers and strip miners do the same thing. A strip miner only fits on the ORE barges, the most common in use being the covetor. A strip miner has a much longer cycle time, but at the same time a higher yield (under most circumstances).
Moon mining is a completely different situation. With moon mining you anchor a control tower at a moon (a moon that has been chosen for its mineral content via a lengthy probing and analysis process), then anchor various structures which facilitate the mining of the minerals. You then turn it on and wait, the mining array will continuously mine the moon and place the minerals in a silo. The minerals obtained from moon mining are then used to create various reactions which are used for tech 2 production.

Osprey --> Retriever --> BS with T2 miners and as much enanchements as possible (Rokh is the best, maybe it is better than the Covetor) --> Covetor --> Hulk
Your skills will have a serious impact on the mining laser and stripminers performance, but with the exclusion of the barge/exumer and the Caldari cruisers skill for the Osprey, they apply equally to all the ships.
The larger cargohold of the barges/exumers is a factor to consider too, as if you are doing Cruiser/BS mining you need to jetcan mining, with all the added complications.

At present my Osprey has 1000m3 cargo and uses 3x miner II's, dumps ore into secure cans and collects with badger 7000m3 -----------------------------------------------

Read this guide. Basicly a strip miner is a over sized mining laser. You can only fit strip miners on mining barges and exhumers. The guide will out line what ships are effective for mining. Mining barges are the next logical upgrade from the Osprey.

Just to give you a comparison, I mine in a hulk with T2 strip miners (no rigs yet), about 4500-5000m3 per 3mins cycle (cargohold is 13k m3 with T2 cargo expanders). 2nd acount character is hauling in a 38k m3 iteron V with rigs or mines along with me in a hulk.
My mining Domi with T2 miners was able to keep up with a covetor with T1 Strip miners, but one of the big advantage of strip miners (only useable on barges) is their 15km range. T2 miners have less (12km I think).

Strip Miners are (as has been mentioned) a module used on Mining Barges.
Generally speaking, they are the way to go if you want to be a dedicated miner. However, if mining is more of a sideline than a profession for you then stick to Miner II's. Train up Mining V, it's worth the time, and other than you won't need to devote too much training specifically to mining.
With decent skill levels, an Osprey (or Vexor) can mine at a rate on-par with a Retreiver. A battleship, such as the Rokh for Caldari, can mine at a similar rate to a Covetor.
Off hand, you mentioned you were mining into GSC's. Unless you are anchoring those suckers you may as well jet-can mine. Unanchored "secure" cans are no more secure than a jet-can as anyone with a hauler can simply scoop them up, ore and all. In a way they're less secure as scooping a GSC doesn't trigger aggression (last I checked). Anchoring those cans seems like a big hassle to me, may as well jet-can mine your fill and fill those GSC's while they're in your hauler's cargohold. --- Wherever you go, there you are. Noth when you can put 4 upgrades on a Rokh with 8 mining laser II, especially if the new upgrades start to work.

How come people bother with Expanded Cargohold when you can just fit a couple of MLUs there instead and increase the yield even more? Have a buddy (or alt for that matter) do the hauling and mine into your cargo, and when your friend is around, jettison it into a can and have him/her haul it. Much more effective.

Actually, expanded cargo holds serve the purpose of making mining a bit easier (or at least less frantic) if one is running around the house between dumps to the jetcan -- I hate coming back to find the miners stopped due to lack of cargo space (whether it is back physically, or back from manipulating my hauler).

Extended CargoHold on your miner ship is just of use if you are :
1. Lazy as hell and don't wanna empty every cycle (I do respect this. Emptying is a bother :D)
2. Hauling the ore in your miner, which you don't, since you have a Badger.

Do you run missions now? If yes, check out the ores in the deadspace areas. They are usually better than what's available in the asteroid belts, and you don't have to compete with other miners. You can jet can mine away since you're harder to find in a deadspace. In these cases I mine until the deadline for the mission bonus is near, bookmark my jet can, claim the mission and collect the ore in a hauler. If you're mining in an Osprey and don't really want to spend that extra time training for a barge, then go for a Rokh and mine with that. That will mine much better than any barge and is much easier to train for.
Lacks in Cargo space though, so find a nice 0.5 system (maybe in Amarr - it's deserted mostly) and litter the belts with secure cans. Alternatively you can mine into a jetcan if no-ones around and collect it every hour or so in your hauler. That's what I used to do, never got one ore thief (I mined in a system a jump from a station). ---

No one ever mentions the Brutix, but I use one to mine when I am taking a break from mission running. i can fit 7 miner II's and one mining upgrade (with co-processors). this gives me 630m3 per minute, plus I usually have a few mining drones out which puts me at a total of 690m3/minute.
I jetcan and pick up in a Iteron mark IV with three cargo expanders.
Works well.

Yes I do, never bothered with mining them asteroids but will look into that.
Would the asteroids in lvl3 missions be better than in lvl2 missions ?
I don't mind missing bonus in lvl 2 but level 3 bonus is better. -----------------------------------------------

There is no direct link between mission level and roids present, "A case of kidnapping" (lvl 1 storyline) for instance fields both a huge Scordite belt and a huge Omber belt, well over 100k M3 of each, and never mind the bonus, the roids reset after downtime, so if you get a really juicy field, you can mine it every day for a week (need to clear out spawns each day)

A Covetor with T1 strip miners beats a Rokh decked out. Perhaps you're not including the bonus of having Mining Barge 5, which is required for the Covetor.

A corpmate and I had a contest awhile back, who could fill a jetcan first. I used my covetor, he was using his rokh. I was on the last cycle to fill my can, when he filled his. Take into account however, I was only using t1 strips and no mining upgrades. I was informed later on that he wasn't setup properly, and can mine even faster. I'm thinking of having a rematch soon.
