Alloys can only be refined to minerals - thus minerals beat alloys.
Easiest to sell - a question of price.

Minerals are much easier to sell, but take into account that alloys take less space than their refined output, so it's best to move your alloys to the intended selling destination and only then refine them.

to make the maximum out of anything to refine, have scrapmetal processing up to at least lvl4.
Note this requires some training ahead of time to do so, since it has some prerequisites like metallurgy, etc.
Pays off in dividends in the end :D -

At level 1 it gets you 0% unrecoverable. Are you suggesting that at higher levels it increases the yields beyond 100%? -- (Battle hardened industrialist)

No, but when using sub-par refineries such as those at un-upgraded outposts the extra skill levels are useful.
