Soloing in smaller Amarr vessels isn't that hard. Arguably you lack med-slots but this is most important if you need to field an injector to be competitive (i.e. bc and up, possibly hac).
As your gunnery skills are lacking a bit and you want to try smaller ships first i'd suggest a Maller.
Maller works best with small (frigate) guns where you can already field t2. Also its a tank and you already have good tanking skills. Try:
5 x medium pulse 2 mwd, web, 20km-scram med repairer 2, 2 x eanm 2, dmg control, 1600mm, heat sink 2
Before the eanm nerf it was possible to make this fit including a med nos. Now as downgrading to a small rep wouldn't be worth it you'll have lots of unused cpu and pg and an empty hislot. Maybe fit a salvager if that fits.  Maybe until you have some experience don't use all t2. But guns and repairers should imo always be t2 as they don't cost that much and are way better than t1 counterparts.
Dmg is craptastic with about 200dps but you can just wear down most cruisers. Also you can easily dispatch haulers under sentry fire (remember to fit 2 x 7.5km instead of web + disruptor and try jovainnon or loes ).
Punisher is one of the top frigs in-game even with lasers (with ac's its just ill ). In solo combat you lack a web but target picking helps a great deal.
Now if you feel comfortable and all that you might consider harbinger. Tank is crappy and dmg is ok. For solo try smthg. like:
7 x focused med pulse 2 mwd, web, scram, med injector 1600mm RT, med repairer 2, eanm 2, dmg control 2, 2 x heat sink 2 + some light and med drones or 5 x med ecm drones
For gang use heavy pulses. 
Prophecy was once semi-viable with med acs and nos but now every little trace of solo ability has vanished imo. Of course in gangs where dps is more deciding you'll also prefer the harbinger.
Back then amarr featured hands on two of the best solo-ships ingame namely the curse and pilgrim. Pilgrim isn't very viable anymore imo, but if you want to try:
2 x med neut, med nos, cov ops cloak 2 web, scram, 2 x balmer td, med inject (400's) 1600mm RT, med repairer, kin + therm hardener 2, dmg control 2
2 x powergrid rigs (maybe 1 suffices - not sure)
You can kill every t1 cruisers and probably some t2 like deimos or zealot and most recons if you can surprise them. Most bc's should be doable except for a myrmidon or drake. BS's with clue aren't really killable now anymore as they just have too much hp IMO.
(please refrain from any flames - if you think you can handle bs just fine with the new pilgrim then congrats. And if you think pilgrim shouldn't solo bs in the first place then you should be fine anyway. No need to tell me i should fit neuts or to go hang myself in the kitchen.)
Curse can still kill things even solo imo but i wouldn't exactly suggest training for it atm. The new sacriledge looks nice but can't say anything as i have 0 sp in missiles atm. Same for vengeance and maledicion. The new Khanid line (except for damnation) is great and i think every self respecting amarr should be able to fly one of these beauties asap. 
Arbitrator is still damn nice so if you don't mind investing in the drone department:
4 x small neut mwd, web, scram, injector eanm, dmg control, 800mm, med repairer + drones
There are myriad ways to fit the arbi. However the nos nerf puts a big question mark on the standard 4 x small nos + 1600 + mwd + small rep + whatever fit in my opinion. Maybe some small lasers or a launcher will be a better option now.
Omen is crap. Still as long as its amarr i'll solo in it no matter what: 
4 x focused med pulse 2, small nos mwd, web, scram dmg control, eanm, 800mm, small rep 3 x warrior 2
Don't expect to win against a decent pvp cruiser!
