There are a ton of skill and equipment based affects. For example, range modifiers on missiles based on: launcher, ship class, ammo type, other installed equipment. However, I don't see a way to find out what the current modified stats are on things like ranges of guns/missiles etc. I do see the ship shields/armor/regen rates etc. update, but do those take into account my stats as well? Just want to get a clear snapshot of what the "real" stats currently are, especially when range is concerned. Thanks!

The information displayed in the fitting window is the "real" stats taking into effect all passive modifiers such as skills and fitted modules.
Once in space, you can right click on your ship and choose show info. From here you can see the affects of any active modules. For example, if you turn on your hardeners, then bring up the show info window, it will show your new resistances.
From the show info window you can bring up the updated stats on any modules that are fitted to your ship as well. This can be most helpful in finding out the range and damge of missiles or other weapons.

It would be nice to know the range of my missiles, however, without having to use a calculator.

Yes, it would be nice, unforunately the only option for that right now is to improve you math skills.

Download Quickfit - it will do all of this and more. It takes into account your current and/or future skills.
You can model new setups, check to make sure that expensive new mod will fit (or what skills to train to make it fit), work out resists, model capacitor usage, plus heaps more.

you can pull up the fitting window in space (alt ctrl shift f?) or right click the capacitor to show info on yourself, missile range is flight time*velocity ___ Support Killmail Overhaul

Max Range of Missiles: Max Velocity * Max Flight time = Max Range --- It have always fallen to a few to sacrifice for the good of many
