Which is the better ore to mine: Veldspar, Scordite, or Pyroxeres?

Depends on market conditions.
Use this site to calculate the value of the ore. When comparing ore value, do not compare the value per unit. Compare the value per volume. Both the rate you mine and the effort required for hauling are directly tied to the volume of the ore, not the number of units.

There is a fancy chart at what every ore yields at (removed website link due to Ebay selling ads at site =/ Use the one above instead). But to answer your question, probably Pyroxeres.

Ore value is affected by 2 things: The likelyhood that a missioner needs the ore for a mining or storyline mission (this will pertain the the basic quality of the ore and mostly relate to ores found in high sec) and the value of the resulting minerals.
As far as mission ores are concerned, especially Kernite and Omber are in demand because these restock only twice a week and are relatively uncommon in high sec space (security status 0.7 and lower, Omber only in Minmatar and Gallente controlled space, Kernite only in Caldari and Amarr/Amatar controlled space).
As far as mineral values are concerned, the current flavor of the month seems to be Mexallon. This mineral is produced in the highest quantities in Plagioclase and Kernite (with Kernite having the highest yield per m3), making those ores the most valuable. Pyerite is a close second (was the flavor of the month until the drone regions were adjusted), which is again produced in a large quantity by Plagioclase, and possibly has the best yield per m3 with Scordite.
It seems the drone regions have a pretty high impact on empire mineral prices. I am curious to know what is so special about this region of space that it affects the market so much more than the rest of nullsec.

At the current market prices (slightly adjusted for future trends), mining in a moderate-skilled Hulk and some gang support gets you VERY ROUGHLY the following income levels PER HOUR of mining (assuming perfect refine, basic ore, etc):
Veldspar : 13 mil Scordite : 12 mil Pyroxeres : 11 mil Plagioclase : 14 mil Omber : 10 mil Kernite: 15 mil Jaspet : 9 mil Hemorphite : 11 mil Hedbergite : 13 mil Gneiss : 20 mil Dark Ochre : 19 mil Spodumain : 12 mil Crokite : 36 mil Bistot : 39 mil Arkonor : 44 mil _
