Will it work as long as you are pointing in the general direction (say, within thirty degrees) of the moon, or do you have to be facing it at full speed?

you really have to be dead on...
There are several "how too" posts around and I think someone even made a youtube video on it once, but basically..
1) warp to the moon, align to it. 2) point either "a little" above or below the actual rim. Make sure you are done aligning. 3) pitch down(or up) pause a sec (or 2,3) and fire.
There usually is a little lag before your ship starts to pitch, depending on your setup. You can test this my doing some test runs to see how fast it reacts, before actually firing.
On big moons its easy to see. If you get your view set behind your ship, (straight behind, and pretty close) you should hit every time.
Small moons can be an art form. It becomes a question of experience and timing. You are going to miss your fair share here, so, bring extra probes. I once missed a small moon 7 times before hitting it...very aggravating.

It's not too hard tbh. When you launch it, if the probe is going to hit part of the moon, it will work. It doesn't have to be heading directly for the center of it...as long as it is heading to hit into part of the moon it's ok....generally...maybe on really large moons this doesn't work far out from the center...but it's really kinda hard to miss on those anyway.

for small moons, it helps alot, to remove the ui (ctrl + tab) -- so you can double click on the moon

Ctrl F9 will removed the UI and you can double click anywhere in the moon and align up with it, with smaller moons however this can prove difficult
