I'm about to start flying these buggers and I can't decide which one I should fly. Any suggestions and suggested setups for each?

The Enyo is fun to fly and is cheap enough to be a bit reckless with. The Ishkur is a bit too expensive and is about to be hit with the nerf bat (again).

Corp mate flys an ishtar to great success.
I think he fits something like
3xsmall blasters T2 1x Small nos (best named)
1x 9km warp scram 1x web T2 or Best named 1x 1mn MWD T2
1x small armor rep T2 1x Dmg control T2 1x Auxiliary Power Control
He's taken out a Drake and a Navy Mega in it....stupid  's
Oh and dont forget 5 T2 hobgoblin drones

Ishkur Pentinor, Ishkur. Ishtars are a much different ship.
However, what Pentinor posted is probably the cookie cutter setup.

I wouldn't think 23 hours is long enough for an ishkur to kill either of those.. lol

Neither. For the cost I could probably get a decent Thorax out of it with much better tank and DPS. Oh yea and 5 med t2 drones. But to each and his own.

I am playing out a bit with Ishkur.
Current setup:
Low slots:
1x SAR II
2x magstab II
Med slots:
1x Cold-Gas I Arcjet (AB)
1x X5 Prototype I Engine Enervator (web)
1x Cap Recharger II
High slots:
3x Light Ion Blaster II with Void ammo
E5 Prototype Energy Vampire
3x Hammerhead II
Works lovely for the time being.. When needed, I replace magstabs with armor hardeners.

[L]: Explosiver harderner T2, Small armor rep T2, Named DC.
[RIGS]: CCC's.
[Drones]: I perfer 2 med 3 light(Explosive) But 3 med 2 light works aswell.

I held a drake at just below half shield for a couple of minutes until a friend turned up in a Vexor... drake didn't take long to go down.
Ishkurs are good ships, here's my current setup from what I can remember. If T2 stuff doesn't fit, then I'm probably just using best named:
High:
3x 125mm railgun II
Mid:
Warp Disruptor II
1mn MWD II
Small Electrochemical Cap Booster
Low:
SAR II
DCU II
Armor Explosive Hardener II
Drones:
2x Hammerhead/Valkyrie, 3x Hobgoblin/Warrior (post nerf that'll change to 5x Hobgob I suspect).
Cap booster 200s in cargo.
This setup pushes cruisers pretty close (I've beaten a few) but make sure you can orbit at 13km or so and have enough cap to burn that MWD if necessary. If all goes well, you'll not take too much damage while dealing your full amount :D
