i was running 2 monitors under XP with 1 128mb graphics card with a single core, a single core AMD 1600 (yeah it was old, and recently died :\). with this setup i was able to play eve full screen and watch movies etc on my 2nd screen. there are a few issues though. 1stly the media player had to have its 'process priority' set to above normal, to play correctly, this did result in a slight 'lag' in eve. This would easily be resolved by your faster processor, and faster card(s). 2ndy To be able to play a video in full whilst playing eve in full screen you need to make sure your native Resolotion, Refresh rate and possible Colour Depth (Control Panel ->Display) match those in eve, for example my settings where 1280*1024@85hz with a depth of 32 bits, i matched my eve settings to this, if you do not you'll find your video crashes when you maximise eve. I'm not to sure about playing multiple instances of eve while having both copies maximised, i have previously had 2 copies of eve open but even my new proc struggles a bit and i didnt dare try to maximise both. i guess the above applies the same though that for each screen your eve graphics settings have to match the native settings of the display you wish to maximise it 2. If XP can't handle this there are probably 3rd party applications out there that can.
bit of general advise on your purchases, get the best you can now (with in a price range) as that means you wont have to upgrade for longer in the future. triple monitors is probably a tad extreme, if you really want 3 i'd suggest you go for duel and then TV or something as i guess you are not going to wanting all 3 for eve, and if you do then you'll prob have to have quite a nifty machine to cope with it. My machine is dying on its arse atm (just due to its age) and my plan is to upgrade the mb proc ram and gfx, but when i do i'll be buying a motherboard that is capable of multiple graphics cards and then possibly add more in the future, my point you dont nessisarly need to upgrade it all at once, take each component and decide what you want and whether you'll need to upgrade anything else at the same time and set your self a budge for that particular portion then get the best you cam within that budget. then you can focus on other parts of your system later down the line.
Vista ? - simple answer dont bother until atleast service pack 1 and even then wait to see the reception it receives. atm your alot better off with XP as the *majority* of the critical issues have been resolved.
