As a note, the map's 3D, as well. Despite the fact it's commonly shown flat, there is a difference between entirely flat and the real structure of the cluster.
Just in case, you open the map by pressing F10. It's told in the tutorial, methinks. (Hint, hint.)
The charted Milky Way galaxy has currently roughly two billion times more stars than the charted EVE cluster. There is a fictional reason for the low amount of stars, though - only certain types of gravity wells are supposed to be able to support the jump gates. On size in lightyears across, the Milky Way is 360 times larger than the EVE cluster, so assuming similar density we'd have roughly 5.5 million stars in the interstellar space.
Naturally, as explained by previous posters, every solar system is a separate zone, just like, say, cities in Guild Wars. So multiple zones handled by multiple processors on one server, but unlike many other games, none of this is instanced (i.e. no multiple copies of the same zone on the same server) or sharded (multiple servers running the similar world). Back to what I was saying, since we can't zone out just by flying out of the system, you'll stay still on the same zone no matter how far you fly. Some French players used a glitch to fly to "Jove space" (which is out of bound for players), but since they stayed in the same zone, in reality they were in a "normal" system (available to players), just REALLY far out of anything (in the middle of emptyness).
