I have:
6600 Core 2 Duo EVGA 8800 GTX x 2 2 GB 800Mhz Ram EVGA 680i MB
I use nhancer with Oblivion HD & AA config and run the game perfectly with "High" cache and "Medium" shadows. Looks great. I can not wait for the new backgrounds, POS models, and other things they will redo soon.

Ehhh, how can old models be more demanding? 
Because the old content is typically very inefficient and CPU heavy.
If you are running a graphics engine that takes use of all the HW features of gfx cards (like clipping, t&l etc), HOW can some content be more CPU heavy than other ? I take it you meant GPU, but even then the old model with less polys and less detailed textures CANNOT be more GPU intensive exactly for the same reason. Unless you are for some weird reason rendering the old models in the old engine.

Shadows are the culprit behind this "problem"
I can turn everything up, even on my 7800gt(except AA, but the 7800 can't use nhancer), but as soon as I put shadows on above low I get hit hard.
Self shadowing is simply a very Graphics intensive, even the best cards these days are going to have trouble with very detailed shadows.
Crysis is a good example here even top end systems get bogged down on high settings, especially as you get the resolution up there. You need something god-like to run full high and get no FPS issues. ====
