Is an avatar always limited to training one skill at a time or perhaps the ability to train more comes later?

You can only train one skill at a time. There are no plans for queueing skills in the works as CCP uses skill training as a way to encourage inactive players to ocasionally log in.
I strongly suggest looking up other threads about this as the skill training system tends to be one of those subjects that can open up a can of worms. Since i will assume you were only curious about how the system actually worked (you posted in this forum after all), i hope this answer satisfied your curiosity.

I've looked around a little this morning but didn't see a direct answer to the question.
I'm sort of a refugee from another mmorpg where people would grind and grind to gain skills and I didn't like that approach at all.
I'm quite happy with the skills system and just wanted to be sure I was using it to my full advantage.

Be sure to check out Eve Mon also to help with tracking skills and planning. It's a great tool

There is an igoogle gadget floating around somewhere that helps you keep track of your current skill as well. Nice if you have igoogle setup as your home page.

Learning skills (basic and advanced) increase your learning speed.
Implants increase your learning speed(buy a full set on contract to save ISK, instead of one-at-a-time on the market).
EveMon helps you keep track of it, and reminds you when it's time to switch.
