Is there a listing or chart that shows what size cargo is transfered per mission level?

It depend as well on the Division of the agent. Agents from Production give only courier mission with cargo space of 1500m^3 to 7000m^3. But there are other divisions who give only courier missions with cargo space of 1m^3.
But i was only doing L4 Production courier missions. So i dont know what division give the "easy" ones.

They vary all over the place. Just yesterday I was offered a courier mission from an L3 _Intelligence_ agent ... 7500m3. Ridiculous. And declined.
Usually an L3 courier is in the 250-800m3 range. The divisions that seem to give out the unreasonable haul sizes seem to be storage and archives, but your mileage may vary.

Here come the numbers.
lvl 1, only did a few ages ago, normaly 1-5 m3. Shuttle
lvl 2, 1-400 m3. can be done in a firg with expanders.
lvl 3, 1-1600 m3. One storyline of 7500 m3. Industrial with speed fit.
lvl 4, 1000-7200 m3. Industrial with expanders. And there is this one lvl 4 storyline which has 40000 m3 cargo (40 cans of 1k each).

I had an L4 courier on sisi that wanted me to move something like 14 million tritanium (it was an odd number, like 14383212 units) 9 jumps, through low sec. I could've bought the tritanium at the target station (maybe) instead, and sold what the agent gave me, but the reward was so low i told him to stuff it. Don't remember the agent type unfortunately.

All have the cloak which I may pull (it's nice to have when you need to go afk)
I am leaning towards the Runner 2 configuration since it has the speed and a bit of survivability. runner 3 is great for jumping across some of the largest systems (but may be a bit of overkill)

Why didn't you just accept the mission, and deliberately fail it, after selling the 14 million trit for around 40 million!!. And just suffer the small standing loss.
That's what i would have done.
(that is ofcourse unless the mission collateral was over 40 million.

The mission is around 2m trit (or at least it was before trinity).

Caldari level 4 (pre-Trinity, have not seen any new courier missions yet): regardless of the agent the volume ranges from 1,500 to 7,000m3. I use a Crane to run them with twin cargo expanding rigs and 2x T2 cargo expanders + 2 Local Overdrives (cargohold between ~4,200m2 to 9,405m3 depending on the fit). Crane is very fast and allows to run between 1 and 3 courier runs simultaneously and on autopilot. +2 warpscramble resists built in help as well but I ususally decline low sec mission offers as the rewards do not make it worth while to venture into the risky places.
40Km3 is a storyline with a very good corp standing boost, not so great faction though...
