I strongly suggest you buy up all the defender missiles you can find. There are also 16 highly exclusive defender I bpo's in Jita 4/4 for a pitance at 67m each. If you buy those 16 you can control the Jita market forever.

There is no way any of us knows exactly which item has the highest turnover. We could only provide insights based on our experience. This begs the question, why would we give out such valuable information to someone who has giving nothing himself. Especially to someone that is likely just an alt.

I'm feeling nice so I will answer this question.
The item with the HIGHEST turnover in EVE is Tritanium. Tritanium is the most common mineral, the base element out of which nearly every other item is made. By a measure of daily average volume bought/sold, both in units and in orders, Tritanium is king.
