I'm pretty sure I can train up obelisk within about 8 days from now find a good mining spot and use the freighter to move large amounts of minerals/ore to a bigger profit region.
OR
I can spend that and more getting scrap metal processing(doing metallurgy 4 atm for 2 days training then will need metallurgy 5 for about 10 days?)
Is scrapmetal processing worth?
And if not over a freighter is it worth it at all?

Exactly, I have done both myself, and it works out great. Nothing like being able to carry about tons of loot to be melted down, and doing it at max efficiency.

Do both, but start with the freighter first. Scrapmetal Processing works with module melting but it sounds like your primary usage will be with <Insert Ore Here> Processing. Get the freighter and you can start hauling while training the next.

Go for freighter now and then train in scrap metal and burn those mods up later on.
Even if you are a mission runner (rat hunter) or whatever... just stock pile up all you junk mods until you are ready to scrap em properly.
Both good skills in the end.. so get em both.. I got lev 5 caldari freighter skill (on my hauling alt).. made for some nice elbow room. I never went over lev 4 scrapmetal processing though... never found the need.

No need for Scrapmetal Processing above 2 if you stick to the base 50% efficiency refining plants that most stations are outfitted with. From time to time I keep running into an old 25 or 30%-er and either swallow and take the loss or move it to another station. No biggie.
