In terms of people's view on PvP being a gankfest, you may be right, but there is a simple reason for this: EVE is a game where you do whatever you want, and lots of people want to "win". When you want to win, you do everything you can to make sure you can win. You pick on the people who can't fight back, you overwhelm them, you harass people till they go away. There are those out there who look for a good fight, and most PvPers love getting into even fights and trying to come out on top, but if you go out to PvP expecting even fights you're going to be disappointed. There really isn't any reason why people should engage in equal fights, there's too much to gain and too much to lose.
EVE is a game about personal goals, but you can't expect everyone to just let you get on with your own, because they have goals too. And you also need to remember that many goals in EVE are long-term. It seems to be a bit of a pain in the arse as a new player, because of all those vets who are whoring everything for themselves, but it can be done. You won't get anything instantly, but set a goal, and perhaps set intermediate ones in between it, and you will achieve it eventually, even if it is to fly a Titan. Just don't expect to be able to glide along and have it happen, because whether you get there or not is up to you.
I think a lot of people come to EVE with expectations that come from other MMO's, WoW being the most common of course. In that game everything is centred around the game world itself. Blizzard have carefully crafted each area to be different and unique, and the focus is on what they have given you to do. However, in EVE it's not like that at all. The world has been seeded, resources put in place, and then we're told to create the fun for ourselves. The flavour of regions and systems doesn't come from what they look like and what's actually in them, it comes from the people that live there instead.
If you're looking for a WoW-like experience, which there is nothing wrong with as WoW is a perfectly good and fun game, you will be massively disappointed with EVE, and there's no getting away from that. But if you're willing to put in the effort to explore things for yourself, work with other people to achieve their goals and have them help you achieve yours, you may find EVE to be great fun.
In summery, I'd say this: EVE is real life in space. Rather than being a game, it's somewhere that people can achieve things like being a world leader, that they'd have no hope of achieving in reality, and that really isn't for everyone.
