Someone was killing faction police
You can sell those tags in space belonging to that faction's enemies, or trade them in at the LP store if it accepts them.

Whoa, I got them while doing a mission for the Caldari Navy killing "environmental terrorists"... so were those guys real Gallenteans? Does that mean my standing with the Gallenteans probably dropped? 
Oh and how can I check which LP stores accepts them? (And what does trading them in get me? Cash? Or LP?)

Oh I interpreted your original post as you having found them at a gate. When people enter space they shouldn't be in they get chased by faction police, but someone in a good ship can just blow the police up. It is possible that the mission you ran caused a standings drop, but not necessarily. Unless it was a storyline mission the drop won't be to any significant degree anyway so it isn't something to worry about. Gallente insignia are going to be required for certain objects in LP stores for Caldari corporations.

If you got Gallente tags from killing Gallente in a mission then you have definitely suffered a faction standing loss for Gallente and by association Minmatar.
Don't be too concerned though. Anyone with a positive stadning to one faction will have a positive standing with friendly factions and a negative standing with the opposition and it's friends.
Those tags are useful in a few ways:
1. you can sell them to the friendly navies on the market for quick cash.
2. you can sell them for more on the open market to people who need them to get items from the loyalty point stores. But putting up a sell order means paying broker fees and waiting, hoping that someone buys them before the order expires.
3. you can store them up and use them in the LP store yourself.

"Environmental terrorists" is a strange mission.
The ship kills don't do a standing it with Gallente but the ships give gallente tags.
Selling them can be a bit ackward if you are in gallente or minmatar space.
Best option is to go in Caldari space in some mission hub, look what they sell for (look the sell orders, not the buy orders) and sell them on market at an higher price than the NPC buy orders.
People need them for the LP store so they should give something.
