I agree with most of the above posters really, I've not read the details of all, but the regulars have pretty much got it right. My two penneth....
Large belts Belts as wide as a grid, full of roids. This is currently what I love about ice belts (seeing other roids/ships off in warpable distances).
Astroid purity vs radiation Richer asteroids = more risk of damage (or adverse affects) on the mining ships. Have the asteroids vary in 'purity' from -50% of the current asteroids, to +100% of their purity. The purer the asteroid, the more chance of something causing damage or leading to the ship having electronic problems (targeting, sig resolution, propulsion, sensor strength, and so on). This doesn't just affect the mining ship, but any ship in the vicinity of the asteroids (including potential hostiles).
Belt variance The closer you are to the 'core' of the belt, the higher the purity. Though be prepared to travel under sub-warp speeds to get to the tastiest asteroids (due to propulsion problems), or take increasing amounts of damage (due to radiation).
The above is simple risk vs reward. People with better equipped ships can get to the best asteroids and get the better prices, whereas those in smaller ships can get to the easiest asteroids (or risk getting greedy and potentially loose their ship).
Trace elements of other minerals Moon minerals, gas cloud minerals, and so on. All potentially held within asteroids, if you know where (or how) to look. Not as profitable as gas clouds, moons, or comets; but a potential earner for those who can't invest in the more expensive methods (eg. mining POS).
Branching out a little more.
Mining platforms A different kind of POS, geared towards mining asteroid belts or assisting those who do it, only profitable as long as a mining op is going on (you wouldn't want to leave one of these things runnign 24/7). I'm thinking mini-POS size, enough resources to house a hangar, asteroid refining array, and maybe a gun or two. You'd have to put some hard limits on what these mini-POS' can mount, to prevent mini deathstar POS' being placed at every belt.
