I have a question: how difficult is it to scan people out inside deadspaces, like missions? I'm trying to do it just for practice and I'm having some difficulty. What probes do you think are good for this? Is it necessary to have two probes scanning the same area (although obviously out of each others scan ranges)?

As I understand it probing people in deadspaces was nerfed so that they have a greatly reduced signal strength.
To counter this I have targeted areas that have a large number of people doing missions. I'd pick up someone doing a level 3 or 4 in 1 to 4 scans depending on the time of day and my luck.
So to answer your question: It is trivial. I don't bother with multiple probes, though it would probably make the odds even better. The older players in such busy systems tend to know how to prevent you from stealing their salvage though. :)

No use using more than one probe. It's chance based and if they are in a mission the chances are greatly reduced.
If they are doing an exploration site, it's much easier to scan for the site not the ship.

Lies. Having probes with overlapping ranges increases the chance of detection in the overlapping section. And probing out an exploration site is a timely maneuver, the target is likely to be long gone by the time you find it.
