I feel sorry for the crews who were on board the Gihadswarm ships...
Anyways...
I always pictured that the Capsuleer is commanding everything in the ship through the implants and technology connected to the users body, and either talks to the crew through a mental command list(as in a sign flashes up the orders of the Capsuleer and they listen) or it goes through the first officers hear mic and they pass it to the crew, or lastly it is done over a unique speaker system.
I always think to myself that the Capsuleer's image and body is seen by the crew, a holographic image of the user(Most likely taking a service image of you like we see from our avatars)
As for how many crew members, to me it seems like it would be like this:
Shuttle: Maybe 1 at the most, but it really is just the size of the pod so maybe no one
Frigate: 6 or 10 crew should work, remember it is working through the mind of the captain so a big crew is not needed.
Interceptors: 2, both to make sure the systems stay checked and make sure everything is done right
Destroyer: 30, with some small room for bed and lodging
Cruisers: 60 - 100, more systems need to be checked even for a Capsuleer to handle it all
Battle Cruiser: 150 - 600, think of the size of a Star Trek Voyager or something to that effect, enough room for comfortable living and a crew able to make sure every order is carried out
Industrial Ship: 60 - 100, heavy lifting workers who make sure the cargo is safe and to make sure the packages stay in their crates
Battleship - 1,000 - 3,000 these large ships need a lot of maintenance, and not to mention how slow it is to turn, imagine a Star Destroyer in terms of size, comfortable living and crewed by some of the best.
Freighter: 1,000 - 1,300: These are elite trainers, to give advice to the Capsuleer and to make sure that its massive hulls are perfectly safe.
Mining Barge: - 50 - 100: These ships need less people to work, the mining lasers do most of the work, but they have to make sure no flaws were made in the ore.
Dreadnougt/Carriers: 10,000 - 20,000: These behemoths have less luxury for less crew sizes seeing how large these ships are and how much fuel is needed to fly these things.
Titan/Mothership: 50,000 - 80,000: Large and heavy the best of the best fly these
