What type of container (with substantial storage capacity), can I haul to an asteroid belt, jettison and leave it there so it will remain there indefinatly?
I intend to mine then place the full hold into the container and then haul it back in a industrial ship when it's full. I don't know much about mining but I understand some containers degrade when left alone in space. I want mine to remain there. Which container should I be using?

No containers remain indefinately. Giant Secure Containers will remain for at least 30 days after their last use though. They're significantly smaller than jetcans though.

Do I have to anchor that though? I'm mining in 0.5.
So long as I password protect it and keep using it within 30 days...no one can destroy/steal from it right?

There is nothing in game that matches your criteria. The largest container that an industrial can carry is a Giant Secure Container, which only hold 3900m3, and when anchored will stay around for 30 days after you last access it. While anchored and with a password set, only people that know the password can access the can. However, it takes a few minutes to anchor it and a few minutes to unanchor it and an unanchored GSC will disappear two hours after being launched into space.
The only "container" that can hold an industrial load of ore (and then some) is a Jettison Container, which is generated when you "Jettison" something from your cargo hold while in space. A 'Jet Can' as they're commonly called can hold 27500m3. However, anyone can access the contents of a jet can and it will always disappear after two hours of it being created.
Really, if you want a totally secure method, your best bet is to mine into a GSC and get a friend (or second account) to have a hauler sitting next to it and transfer it from the GSC into their cargo hold. ---

You can anchor stuff in any system other than 1.0, 0.9, and 0.8 systems. ---
